The hanger steak is an underused and underrated cut of meat. It is also known as a Butcher’s Tenderloin or Butcher’s cut or Butcher’s steak as it is a lesser known cut that butchers traditionally kept for themselves. It is rich and tender with beefy taste that some people find appealing. Occasionally seen on menus as a “bistro steak”, hanger steak is also very traditional in Mexican cuisine. The hanger steak has been gaining popularity in recent years because it’s not very expensive and it tastes amazing when cooked properly.

Where Does the Hanger Steak Cut Come From?

The Hanger Steak is a cut of beef that comes from the diaphragm muscle, also called the hanging tenderloin (or onglet) from which it gets it’s name. When trimmed, it will look like a strip steak or tenderloin.

Hanger steaks are great with marinades or rubs, cook it on the grill, the BBQ, or in the pan. It’s a truly wonderful beefy steak.
