Irish Coddle

When you see restaurants offering Irish stew on the menu, they probably mean Irish Coddle. Irish Coddle is a traditional Irish dish that is slow simmered low and slow in the oven to maximize deliciousness. Typically consisting of thick cut bacon, potatoes, onions and other vegetables in a broth with parsley and thyme and usually varying amounts of Guiness.

The name “shepherd’s pie” comes from the fact that it was originally made by shepherds when they would take their food out into the field with them.
