So What Is A Maui Rib?

First, let’s talk about the cut of the rib. Maui ribs start out as beef short ribs that has been cut across the bone, also known as a flanken cut. The slices are cut thin. They are thin enough that even though the shortrib is usually a tougher cut that usually requires braising to obtain tenderness, the Maui rib’s thinness allows it to cook quickly on a grill and when cut across the bias can be tender without being chewy.

Origins Of Maui Ribs

The original Maui rib came from a Korean market called Azeka’s market in Maui. They sold a style of Korean kalbi style ribs. Maui ribs’ taste comes from the marinade that typically consists of soy sauce, brown sugar, and ginger. A tart apple or pear is usually mixed in to help act as a tenderizer and add flavour.
